cowboy star update

according to san diego metropolitan magazine, cowboy star will be opening in september, and will include a restaurant, bar and butcher shop. the fireplaces and exposed beam ceilings would seem to make this a unique place to eat in east village. and i'm sure the folks moving into the mark condominiums around the corner will appreciate the butcher shop.

can we please, please talk about the dangers that condo buyers face when they move into a building that shares space with a restaurant that utilizes a "grease trap". let's just say- the technology involved in grease trap cleaning is suprisingly primitive, and the smell of rancid grease in an elevator shaft is a serious... fucking... bummer...

Wow, shows how little you know about restaurants....
"Grease Traps" are so out- and most new restaurants give their oil to bio diesel companies. Get with the times.
